Took Me 6 Hours For Two Racks

And my grill dogs his, but he knows what he's talking about, except using charcoal intead of wood exclusively. Do Just Fine.

It shouldn't take more than 4 hours to smoke ribs. A charcoal and hickory mix works best. Also, the best way is to place the ribs directly on the grill, meat side down, for about 10 minutes. After that, lay foil over the grill and stack your slabs on top of one another, bone side down. This allows the fat to drip down in a cascade which drastically improves the end product. Just be sure to rotates the slabs in the stack about every 30 minutes.
